When a Café Meets AI, Circular Economy and Longevity
What happens when healthy food, longevity science, artificial intelligence and circular economy principles come together? In Prague, there is a rather unusual answer: Healthy Longevity Café. We selected this business as a good practice example from the Czech Republic within the SMART CIRCLE project. As part of the development of Module 6 - Communicating the Smart Circular Roadmap, led by the Czech project team, we explored how a small business can combine sustainability, digitalisation and innovation in practice. In September 2025, we visited Healthy Longevity Café and filmed a video presenting this unique concept directly on site. After several months of preparation and coordination, we can finally share it.
More than just a café
Healthy Longevity Café was founded in Prague in 2022 as a pilot project by entrepreneur Petr Šrámek. In addition to healthy meals, smoothies and coffee, it offers health diagnostics related to areas such as biological age, stress levels and cardiovascular health. The Longevity Lab on the upper floor provides personalised consultations and nutrition plans. It is a place where gastronomy, health, science and technology come together.
Circularity and AI in everyday operations
The café has gradually introduced several circular economy practices. It sorts waste, uses furniture and work surfaces made from recycled plastic, and incorporates live plants and circadian lighting into the space. AI tools are also an important part of its daily operations. Fireflies.ai supports meeting transcription, Designs.AI helps create marketing content, while ChatGPT and Gemini are used, among other things, for pricing and margin calculations. NotebookLM and other AI tools support the Longevity Lab in processing diagnostic data. Customers can also use the CAROL Bike, an AI-powered fitness bike that adapts the workout to each user.
Inspiration for other businesses
The Healthy Longevity Café case demonstrates how even a small business can gradually combine circular economy, AI and wellbeing and integrate these principles into its everyday operations. It also shows that innovation is not only about technology. The ability to communicate change clearly, build customer trust and engage employees and other stakeholders is equally important - and this is one of the key themes of Module 6 within the SMART CIRCLE project.
